Mutabal is a delicious appetizer that is served cold. It’s a very popular Middle Eastern dish made with roasted eggplants and yogurt as its main ingredients.
Ingredients
- Tahini Sauce – 2 Tablespoons
- Eggplant – 2 (medium size)
- Sumac – 1 Teaspoon
- Salt – 1/2 Teaspoon (or to taste)
- Lemon Juice – 1/2 Lemon
- Pomegranate Seeds – 3 Tablespoons
- Mint Leaves – 2 Tablespoons
- Extra Virgin Olive Oil – 2 Tablespoons
- Yogurt – 2 Tablespoons
Method
Step 1. Grill the eggplant for 20 minutes. A flame grill will give you a smokey taste, although you can grill it in the oven as well.
Step 2. Remove the skin and chop it using a blender.
Step 3. In a bowl, mix Tahini sauce, Yogurt, Salt, and Sumac powder to get the Mutabbal ready
Step 4. Pour it into a serving dish.
Step 5. Garnish by drizzling some Extra Virgin Olive Oil, mint leaves and pomegranate seeds, and sumac powder.
Best served with Pita Bread, Rice, and Meat dishes.
